Steak bomb — Nova Hampshire, the United States

In New Hampshire, many pizzerias and sub shops—what long-roll sandwiches are called—have a steak bomb on the menu. The base is thin-sliced or cubed beef, seared on the griddle with onion, bell pepper and mushrooms. Slices of salami, sometimes pepperoni, are added on the same griddle, and a generous layer of cheese goes on top, melting from the heat. Everything is placed into a split, warm long roll.

The cheese varies by shop: American cheese or provolone. Some places spread mayonnaise on the roll.

No one knows for sure where the steak bomb originated. Shops in New Hampshire and other New England states claim to have created it, and many consider it a cousin of the Philadelphia cheesesteak, with the salami and mushrooms as distinguishing features. The sandwich is common throughout New England, but in New Hampshire it’s treated as the state’s sandwich.

It’s everyday food—quick lunch, casual dinner, or takeout—and the shops in the state have their own versions.
