Peach pie — Delaware, the United States

Peach pie is an American double-crust pie, or sometimes topped with a lattice crust, filled with slices of ripe peach mixed with sugar, a little flour or starch to thicken the juices and, in many recipes, cinnamon and nutmeg. It bakes until the crust turns golden and the filling bubbles through the vents.

In Delaware it is a state symbol. In the 19th century Delaware was one of the United States’ major peach producers and became known as the Peach State; in 1895 the peach blossom was made the state flower. In 2009 the Delaware legislature declared peach pie the official dessert, responding to a suggestion from students at a school in Dover, the capital, who highlighted the historical importance of the state’s orchards.

The pie accompanies summer, when peaches are ripe. It is featured at peach fairs and festivals with pie contests, and appears at farm stands and roadside markets.
