Kringle — Wisconsin, the United States

The kringle came to Wisconsin with Danish immigrants who settled in Racine on the shore of Lake Michigan in the late 19th century. In Denmark the dough was shaped like a bow; in Racine bakers began forming it into a large oval ring, and that shape stuck.

The dough is puff pastry made with lots of butter, folded and rested for days until it has dozens of very thin layers. Fillings range from fruits such as cherry, raspberry, and apple to pecans, almonds, and cream cheese, and the topping is a white icing.

Racine presents itself as the kringle capital in the United States, and Wisconsin selected the kringle as the state’s official dessert. It’s sold in bakeries and markets whole to slice at home, and it’s a common gift at Christmas and during the year-end holidays.
