Sugar cream pie — Indiana, the United States

Sugar cream pie is the pie most closely associated with Indiana, to the point of also being called Hoosier pie, from hoosier, the nickname for someone born in the state. It’s a 19th-century farmhouse recipe made with what was available in the kitchen even at the end of winter, when there were no fruits: heavy cream, sugar, flour, butter and vanilla.

The filling is creamy and firm, with no eggs in the traditional recipe, and is baked in a thin crust until golden on top. It’s sprinkled with nutmeg or cinnamon. The tradition links the recipe to the state’s rural communities.

The Indiana Senate honored sugar cream pie as the state pie in 2009. A culinary route brings together bakeries and restaurants that serve it. It’s food for family celebrations, agricultural fairs and Sundays, and is often served with coffee.
