Lobster roll — Portland, the United States

The lobster roll is the sandwich of New England’s coast, and Maine — the state that catches the most lobster in the United States — is the place most linked to it. The lobster meat — tail, claws and joints — is cooked, removed from the shell in large pieces and placed in a soft roll split on top, with the sides toasted in butter.

There are two ways to serve it. In the Maine style, the lobster is served cold, mixed with a little mayonnaise, sometimes with chopped celery. In the Connecticut style, it’s served hot, drizzled with melted butter. In Portland and other coastal towns, both versions appear on menus.

The lobster roll is a summer food, from June to August, sold at stands by the pier, at seafood restaurants and at beach kiosks, usually served with french fries or chips and coleslaw on the side.
