Saltwater taffy — Atlantic City, the United States

Saltwater taffy is the boardwalk candy of Atlantic City, New Jersey. The dough of sugar, corn syrup, butter, salt and a little water is cooked, pulled in machines until light and airy, cut into small pieces and wrapped in wax paper with twisted ends.

The name has a legend, told as a story rather than fact: in the late 19th century, a flood supposedly soaked a vendor’s stock on the boardwalk with seawater, and he began selling “saltwater candy.” In truth, the recipe does not use seawater, only a bit of salt.

Boardwalk shops make the candy in their windows in dozens of flavors and colors, and boxes of taffy became the classic souvenir of New Jersey’s shore towns.
