Mackinac Island fudge — Mackinac Island, the United States

Fudge arrived on Mackinac Island in 1887, when the island was shifting from a military and fur-trading post to a summer resort destination. That year the Murdick family, who had come to make the canvas awnings for a new large hotel, opened the island’s first candy shop. The smell of fudge being made would stop passersby in the street.

The preparation became a spectacle: the mixture of sugar, butter, cream and chocolate is cooked in copper kettles, poured onto large marble tables and turned with spatulas until it begins to crystallize, then shaped into blocks. Shops do this in front of their windows, and spectators are often given a sample.

From the 1960s on, visitors began to be called fudgies by locals. In high season more than a dozen shops on the main street make fudge every day in dozens of flavors, and boxes of fudge have become the island’s most common souvenir.
