Kansas City barbecue

Slow-smoked meats — pork ribs, beef brisket and burnt ends (the caramelized tips of the brisket) covered in a thick, sweet, reddish tomato-and-molasses sauce. This is the Kansas City barbecue style.

Kansas City barbecue — Kansas City, the United States

Kansas City barbecue has roots in the early 20th century, when the city was one of the major meatpacking and cattle-trading centers in the United States. The tradition is linked to Henry Perry, who sold smoked meats wrapped in newspaper, and to the cooks who worked with him.

The hallmark of the style is the variety of meats — pork, beef, chicken, sausage — slow-smoked over hickory wood, and the sauce: thick, sweet and reddish, made with tomato, molasses and brown sugar, brushed on at the end or served at the table.

The most characteristic dish is burnt ends: the tips of smoked beef brisket, cut into cubes and returned to the smoke until they caramelize.
