Boston cream pie — Boston, the United States

The Boston cream pie is a cake, not a pie: two layers of buttery sponge cake, a thick layer of pastry cream in the middle, and a chocolate glaze on top. The name comes from a time when cakes and pies were baked in the same round pans, and the two words blurred together on American menus and in cookbooks.

The creation is attributed to a French pastry chef who worked at a downtown Boston hotel that opened in the mid-1850s. There the dessert reportedly appeared first as chocolate cream pie. Similar cakes filled with cream or jam already existed in New England; what set the Boston version apart was the chocolate topping, at a time when chocolate was mainly consumed as a drink or in puddings. A recipe called chocolate cream pie was published in a cookbook in 1887.

In December 1996, the Boston cream pie was declared the official dessert of Massachusetts. The proposal came from a civics class at a state high school and beat other candidates, including the chocolate chip cookie and Indian pudding, a cornmeal and molasses pudding. Years later, the state adopted as its official doughnut a jelly-filled doughnut filled with the same cream and covered with the same chocolate.

The cake is sold whole or by the slice in bakeries, cafés, and restaurants in Boston, and also in individual portions. It is served cold or at room temperature, as a dessert or with coffee.
