Green chile cheeseburger — Novo México, the United States

The green chile cheeseburger is New Mexico’s signature burger: grilled beef, melted cheese, and a generous layer of roasted, skinless, chopped green chile on top. The chile is from the long varieties grown in the state, harvested while still green and roasted in rotating drums that fill towns with the season’s characteristic aroma.

Chile is so central to the state’s cuisine that New Mexico adopted an official question, “Red or green?” which servers ask diners ordering local dishes: red chile or green chile. The answer “Christmas” requests both. On the burger, however, the chile is green.

The origin is disputed. Roadside stands in small towns and lunch counters in Santa Fe and Albuquerque claim the earliest versions, around the mid-20th century. What’s certain is that the sandwich spread across the whole state, from big-city diners to village bars. The New Mexico Tourism Department created a route, the Green Chile Cheeseburger Trail, featuring places from various regions, and the state fair hosts a burger contest.

Chile heat varies with the harvest and the restaurant, from mild to quite spicy. If you’re not used to it, ask at the counter how the chile is today.
