Seattle-style hot dog — Seattle, the United States

What defines the Seattle hot dog is the cream cheese. The bun, toasted on a griddle, gets a generous layer of the creamy cheese, often applied from a squeeze bottle; inside goes a grilled sausage or Polish kielbasa split lengthwise, and on top, onion grilled until soft. After that, each person adds what they want: jalapeño, hot sauce, mustard, or braised cabbage.

The story is told in Pioneer Square, Seattle’s oldest neighborhood. The most accepted version says that in the late 1980s a bagel vendor with a cart in the neighborhood began putting sausages in buns spread with cream cheese to serve people leaving live-music bars in the early morning. Other vendors copied the idea, and the name “Seattle dog” stuck.

The Seattle dog remains late-night street food: it comes from carts in front of bars in Capitol Hill and Pioneer Square after shows, and from vendors around stadiums on game days for American football, soccer, and baseball.

Because the required ingredient is cream cheese, versions vary a lot, and each cart has its own combination of toppings.
