Lane cake — Alabama, the United States

Lane cake is a celebratory cake from Alabama. It has three or four layers of white sponge made with beaten egg whites, and between them a cooked filling of egg yolks, butter and sugar, thickened over heat and mixed with raisins, chopped pecans and, in many recipes, shredded coconut. The distinguishing touch is a measure of bourbon or whiskey in the filling, which perfumes the entire cake.

The recipe is attributed to Emma Rylander Lane, of Clayton in southeastern Alabama. According to tradition, she won a cake contest with the creation and published the recipe in a cookbook in 1898. The cake became better known outside the state after appearing in To Kill a Mockingbird, the novel by Harper Lee, who was born in Monroeville, Alabama.

In Alabama and much of the American South, serving a homemade Lane cake, elaborate and multi-layered, signals a special occasion: birthdays, weddings and year-end holidays. In 2016, the Alabama Legislature declared Lane cake the official state cake.

There are versions where the filling also covers the outside of the cake and others with a white meringue frosting. Lane cake is often confused with the Lady Baltimore cake, another Southern cake with fruit and liquor, but of different origin.
