Colorado green chile — Colorado, the United States

In Colorado, green chile is at once a sauce, a soup and a stew. The base is long pod green chiles, roasted until the skin chars, peeled and chopped. The Colorado version typically includes cubed pork and tomato, which makes it thicker and orange-tinted, unlike the New Mexico version, which is greener and smoother.

The dish comes from Mexican cooking and chile verde but developed its own identity in the state. Many cooks use Pueblo chile, grown in the southern part of Colorado, and comparisons with Hatch chile from New Mexico are the subject of a long-running rivalry between the neighbors.

Green chile appears in many forms: in a bowl with flour tortillas; poured over burritos in the smothered style; in breakfast burritos; and on burgers. In Pueblo, the slopper is an open cheeseburger covered with green chile.

At harvest time, roadside stands and fairs roast chiles in rotating drums over open flames, and the smell fills the streets. In September, Pueblo holds the Chile & Frijoles Festival.
