Maple creemee — Vermont, the United States

In Vermont, soft-serve ice cream is called creemee, and the most requested flavor is maple. The maple creemee is made with a milk-and-cream base sweetened with maple syrup, and it comes from the machine in a spiral, with the flavor of maple syrup. It’s served in a cone or cup, plain or swirled with another flavor such as vanilla or black raspberry.

The treat brings together the two products that best represent the state. Vermont is the largest producer of maple syrup in the United States, and milk production is the foundation of its agriculture. State syrup producers say the maple creemee was introduced at the Vermont State Fair in 1981 and later spread to roadside stands.

The Vermont Agency of Agriculture and the producers’ association maintain the Vermont Maple Creemee Trail, a route of stops that use only pure maple syrup in the flavor. Creemee stands typically open during the warmer months, many of them on farms and sugarhouses where the syrup is produced.

In Vermont’s short summer, stopping at a creemee stand in the late afternoon after a drive through the Green Mountains is a local custom.
