The xuixo is Girona’s sweet. It is a leavened, laminated dough, rolled out into a rectangle, filled with cream and rolled into a cylinder. After proofing, it is fried in oil and coated in sugar, with the cream remaining soft at the center.
Girona city hall places its creation around 1918 at the Puig pastry shop, and celebrated its centenary in 2018. Pastry tradition connects the recipe to Emili Puig and to the collaboration of a French pastry chef. The sweet spread through the pastry shops of Girona and Catalonia, and is listed among local products by the Generalitat.
Local legend offers another explanation for the name. It tells that Tarlà, in love with a pastry chef’s daughter, hid in a sack of flour when her father arrived. A sneeze gave him away. To be forgiven, he offered the pastry chef the recipe for the sweet. This is a popular tale, which the city hall presents as legend.
The city hall cites the xuixo as the city’s typical sweet in its gastronomic promotion plans, and Girona hosts a contest dedicated to it. It is sold in the pastry shops and bakeries of the city center, to be eaten at breakfast or as a snack.
