The potato omelette exists throughout Spain, but in Betanzos it has its own style. The town’s version is made with undercooked eggs that leave the interior creamy and almost liquid, what Spaniards call "babada." The traditional recipe uses only potato, eggs, olive oil and salt, without onion.
The potatoes are sliced thin and cooked slowly in the oil, without browning. The eggs are lightly beaten and the omelette spends only a few minutes in the pan on each side. The result is low and golden on the outside and soft in the center.
The Concello de Betanzos organizes an annual omelette contest and, since 2011, a week dedicated to it. Galicia’s tourism board presents the town with the omelette among its attractions.
