Tudela is the capital of the Ribera of Navarra, the Ebro river plain covered in vegetable gardens. From them come the asparagus, artichokes, broad beans, peas and chard that make the region famous and that are combined in the menestra, the dish selected to represent Navarra in the postal-stamp series with the Royal Academy of Gastronomy.
The principle of Tudela’s menestra is to treat each vegetable separately. Each one is cleaned and cooked for its own time, to preserve texture and color, and only at the end are they all brought together in a casserole with a sauté of garlic and ham. Some Navarrese versions bread and fry some of the vegetables before joining them.
It is a seasonal dish. The most celebrated version is the spring one, when artichokes, broad beans, peas and asparagus are fresh at the same time. Outside that season, the menestra adapts to what the garden offers.
The city celebrates the garden every spring in the Fiestas de la Verdura, promoted by the Orden del Volatín together with Tudela city hall and declared of regional tourist interest in Navarra. The celebration began in 1986 and entered a new phase in 1995. The program includes menestra tastings, contests and vegetable menus at Ribera restaurants.
