Crema catalana, also called crema de Sant Josep or crema cremada, belongs to the confectionery tradition of Catalonia. The name Sant Josep recalls the March 19 festival when the dessert was traditionally served.
The cream is made with milk flavored with a stick of cinnamon and lemon peel, egg yolks, sugar and cornstarch, cooked over low heat until thick. After cooling, it is served in shallow earthenware bowls.
The finishing touch is what identifies it. Just before serving, the surface is sprinkled with sugar, which is caramelized with a spiral iron heated over a flame, forming a thin, hardened layer of caramel. For that reason it is also called crema cremada, “burnt cream.”
Traditionally it was the dessert for Sant Josep’s day, March 19, and today it is eaten all year. Its popularity inspired ice creams, liqueurs and fillings for coques and torrons, as well as Girona’s xuixo.
