Poutine râpée — Novo Brunswick, Canada

Poutine râpée is a dish of the Acadians, the descendants of the French settlers who lived in Canada’s Maritime provinces. It has nothing to do with Quebec poutine. It’s a fist-sized ball made from grated and squeezed raw potato mixed with mashed cooked potato, with a salted pork filling in the center.

The dumplings are boiled in water until they are firm on the outside and soft inside, with a slightly elastic texture. They are served hot, whole, and eaten in different ways: with sugar, with molasses, or with salt and pepper.

Poutine râpée is made mainly in southeastern New Brunswick, around the Moncton area, and appears at family gatherings, parish dinners, and Acadian cultural celebrations.
