Posta mirandesa — Bragança, Portugal

The posta mirandesa is a thick cut of beef, three to four centimeters thick, grilled over charcoal and seasoned only with coarse salt. It comes out browned on the outside and pink inside, served rare to keep the juice. The secret lies in the quality of the meat and the high heat.

The meat comes from the Mirandesa cattle breed, raised on the lameiros, the natural meadows of northeastern Trás-os-Montes. Carne Mirandesa has a protected designation of origin, and breeders in the region defend it as part of the landscape and rural economy. It’s not just any steak: the name posta mirandesa refers to that breed and that land.

Miranda do Douro sits on the Mirandese plateau, next to the border with Spain, above the gorges of the Douro River. The region has its own culture, with the Mirandese language, Portugal’s second official language, and the dance of the pauliteiros. Turismo de Portugal recommends tasting posta mirandesa, typical of the Miranda do Douro region, on a trip through the North.

It is said the dish was born at cattle fairs in the district of Bragança, where the meat was grilled with coarse salt and served on slices of bread. The recipe remains simple. Many places serve the posta with a sauce of garlic, olive oil, vinegar and the juice that runs from the meat.

It is accompanied by boiled potatoes with skin, grelos or salad. It usually pairs well with a regional red wine.
