Pastel de Chaves — Vila Real, Portugal

The Pastel de Chaves is a savory crescent made from puff pastry with many thin layers that turns crisp and golden in the oven. The filling is seasoned minced veal. It comes in two sizes: the regular, which serves as a light meal, and the appetizer size, smaller.

Since 2015, the name Pastel de Chaves is a protected geographical indication of the European Union. Only pastries made in the municipality of Chaves, in Trás-os-Montes, according to the specification file, may use the name. The official registration document describes the pastel by its crescent shape, its crisp puff pastry, and its veal filling.

The story goes that in 1862 a traveling vendor walked through Chaves with a basket of oddly shaped meat-filled pastries that sold out quickly. The owner of a city pastry shop is said to have bought the recipe for one pound. According to the European registration, for more than 75 years the recipe belonged to a single establishment; only around the 1940s did the knowledge spread to other bakeries and the pastel became the signature of the whole town.

Chaves lies in the Tâmega valley, near the border with Galicia. The region is also known for its fumeiro (smoked meats) and for the folar de Chaves, a meat-stuffed bread eaten at Easter.

The pastel is eaten hot, at any time: at breakfast, as a snack, or as a starter. It is sold in the town’s bakeries and cafés.
