Bôla de Lamego — Lamego, Portugal

The bôla de Lamego is a kind of filled bread, made from leavened dough with wheat flour, eggs and olive oil or another fat. The dough wraps the filling and bakes in a wood-fired oven until golden outside and soft inside. It is cut into slices that reveal the layers of dough and filling.

The most traditional fillings are pork: ham, salpicão, meat in vinha-d'alhos and smoked shoulder. There are also bôlas with cod and with sardine, and the town's bakeries have created other versions. The dough rises slowly, and the wood-fired oven gives the characteristic flavor.

Legend links the bôla to the Cortes of Lamego, the assembly that, according to tradition, acclaimed D. Afonso Henriques as the first king of Portugal in the 12th century. It is said the town was not prepared to host so many people and that, to feed the visitors, salted, smoked or vinha-d'alhos pork was added to the bread dough. It is an origin story without documentary confirmation.

Lamego sits in the Douro, a few kilometres from the river, and the bôla is part of the region's table alongside ham, roast kid and the wines. Turismo de Portugal recommends tasting the traditional bôla de Lamego on a trip through the North.

It is served as a starter, snack or light meal, hot or at room temperature. In the town it is usually paired with a wine or a sparkling wine from the Lamego region.
