Galette-saucisse — Rennes, France

The galette-saucisse brings together two products of Upper Brittany: the buckwheat galette, a thin, dark pancake made only from buckwheat flour, water and salt, and a grilled pork sausage. The hot sausage is wrapped in the galette, which may include mustard, and the whole is eaten with the hand while standing.

In Rennes it’s the snack of the des Lices market, created in 1622 and held every Saturday morning in the square of the same name. Stalls prepare the galettes on the spot for people passing between the fruit and vegetable, fish and salted butter stands.

The galette-saucisse has also accompanied Stade Rennais matches for decades, the city’s football club; the Museum of Brittany holds photos of stadium vendors selling it in the 1960s. A local nickname, robiquette, is associated with a sales point on the way to the stadium in Saint-Grégoire. Since 1994 a supporters’ and enthusiasts’ association has worked to defend the tradition.

The buckwheat galette is typical of Upper Brittany, the eastern part of the region where Rennes is located; in Lower Brittany, to the west, the name crêpe can also refer to buckwheat preparations.
