Bœuf bourguignon — Borgonha-Franco-Condado, France

Bœuf bourguignon is a beef stew. Pieces of meat from cuts suited for long cooking are browned and then simmered slowly, in a covered pot, in a sauce of Burgundy red wine, with diced bacon, small onions, garlic, mushrooms, carrot and a bouquet garni. After hours, the meat becomes tender and the sauce thick and dark.

The dish is named for Burgundy, the former province in east‑central France that is now part of the Bourgogne‑Franche‑Comté administrative region, and is associated with the region’s red wines and cattle rearing. It is considered one of France’s most popular dishes. It has no single city of origin, and sources disagree about when it took its present form.

In Burgundy it shares the table with other local specialties, such as escargots with garlic‑parsley butter, œufs en meurette (poached eggs in red wine sauce), and jambon persillé.

It is a Sunday and family dish, made in advance; many say it tastes better the next day.
