Entrevero de pinhão — Lages, Brazil

Entrevero means mixture, and the dish lives up to its name: beef, pork, sausage, sometimes chicken and bacon are sautéed together with cooked, peeled pinhão, onion, bell pepper and tomato. Pinhão, the seed of the araucaria tree, gives the dish a slightly sweet flavor and a tender texture.

The recipe is part of the cuisine of the Serra Catarinense. The preparation is usually done in cauldrons or iron pots, and sometimes on plow discs over the fire, in view of those who will eat.

The araucaria is the symbolic tree of the mountains, and the pinhão harvest usually takes place from April to July. In Lages, the Festa Nacional do Pinhão, in June, brings together dishes made with the seed, such as entrevero and paçoca de pinhão, sold at booths run by local organizations.

Santa Catarina declared the pinhão entrevero, a typical mountain dish, part of the state's cultural heritage.

It is served hot, as a main course.
