Torta de miel
Dark wheat-flour cake sweetened with miel de caña, the dark cane molasses, instead of sugar. In a roll version it’s called pan hũ or boquerón. Itá, the city of the clay water jar and honey, keeps the tradition of making it.

The city
City of the Central department, 37 km from Asunción, founded in 1539 and known as the city of the pitcher and of honey. The Franciscan temple of San Blas, from 1698, houses a colonial altarpiece, and the town’s lagoon has lookouts and caimans. The house of Rosa Brítez, the town’s best-known ceramist, keeps the clay tradition alive. Itá is also the city of the torta de miel, made with cane molasses.

The local experience
Franciscan church from 1698 dedicated to San Blas, patron of the city and of Paraguay. It preserves the colonial style, and the main altarpiece is protected as national cultural heritage.
Lagoon in the town center, with lookouts, benches and a small children’s playground on the banks. Dozens of caimans live there, and the lagoon is surrounded by legends, such as that of a gold bell thrown into the water during the war.
