Akçaabat köftesi — Trebizonda, Turkey

Akçaabat is a coastal district west of the city of Trabzon, on the Black Sea coast, and gives its name to the best-known köfte of the province. The registered recipe is simple: beef, stale bread, fat, salt and garlic, with no other seasonings. The meat mixes cuts from the brisket with shoulder, rib, filet and neck.

The meat is ground, and the mixture is kneaded for about an hour, shaped by hand and left to rest. The köfte are small discs, 33 to 40 grams and at most 2 centimeters thick, ranging in color from pink to brown. They are grilled over wood charcoal, without a fan or anything that blows the fire.

The application for the geographical indication of the name "Akçaabat Köftesi" (No. 132) was filed by the Chamber of Commerce and Industry of Trabzon and is the province's first geographical indication. It states that the köfte has a long history in the region and that the preparation, especially of the mixture, requires skill.

The köfte comes with sweet pepper and roasted tomato, as specified in the registration.
