Helado de paila
Ice cream made from fruit juice beaten by hand in a copper paila that spins over ice and salt, without a machine. It is Ibarra’s sweet tradition, where the recipe’s history is attributed to a family since the late 19th century.

The city
Capital of Imbabura province, at about 2,200 meters, at the foot of the Imbabura volcano and 25 km from Otavalo. Founded in 1606, it was destroyed by the 1868 earthquake and refounded in 1872 with white façades, which earned it the nickname Ciudad Blanca. It has plazas with palm trees, 19th-century churches, the Yahuarcocha lagoon to the north, and helado de paila, a fruit ice cream hand-beaten.
